'Those' who seemingly just don't have a clue?!
When you work in a eatery that's both huge and has a 'layback, no host, open door(s) attidude...
OK for customers...
Chaos for the overworked, undervalued, minimum wage, short staffed team who are expected to:
○ make and take drinks to tables before food arrives, dispite backlogs of drinks and having to run a bar too
○ food out at a rate to rival a fast food outlet
○ tender the till
○ be on top of dine'n'dashers
○ ensure cutlery's cleaned
○ and glasses
○ ensure cutlery's polished
○ and glasses
○ also cups and saucers cleaned and ready
○ replenish stock
○ wait tables with your hands full
○ make sure tables cleaned before a customer, who's free to wonder in through multipul entrances/exits and sit where they want, sit at a dirty table; something you can gaurentee they'll do dispite many clean ones around, because people love a 'seat with a view'
Then there's the customers in person!
But that's a collection for another day there.
Also co-workers.

A mystery shopper or a top ranking suit of a boss landing employees in it for what was breifly amiss upon glance doesn't sit well with said employees too drained to fear higher's threats.
