I think the simplest answer is the p word, anon.

Puberty.

I strongly believe the protagonists are 11 in this series, they look much older than previous characters (except Misty, Brock and Cilan) , meaning Serena has most likely hit hell puberty. When girls hit puberty they usually grow taller and as we know,

Serena is taller than Ash. Poor girl is not only going through confusing and annoying physical changes, but also confusing and annoying emotional changes.
People gave her shit for crying and breaking down after her first loss, but it probably was her hormonal imbalance that made her so emotional. It's just biology, and us girls deal with it monthly when hell time of the month comes.
But linking it back to the crush, girls hit puberty before boys. Ash will most likely hit his puberty next year, when he's 12, whereas Serena is, as mentioned, already going through hers.
During this period (no pun intended) girls are much more romantically interested and crushes develop very quickly, whereas boys are pretty dense and not interested in love, for the time being.

^ Perfect example. Serena's emotional imbalance can't be helped whereas Ash, who hasn't hit puberty yet, doesn't understand why the hell Serena blushes all the time as he doesn't know what it's like to have a crush. He isn't at that life stage yet.
This is also evident in Misty's case.
Misty is also taller.

And Misty's crush is pretty canon too.

Sooo, Misty and Serena are pretty much in the same boat.

So basically Pokemon doesn't completely ignore life stages such as prepuberty and puberty, might be subtle but after enough thinking and analysing, it makes some sort of sense. And at least we're clear on why Ash is so fucking dense.

So there you have it, anon, I just gave you a scientific explanation as to why amourshipping (and pokeshipping) is the way it is lmao

He randomly hits puberty in this episode and "matures a bit further" and starts acting less childish/idealistic/dense

Although I swear he had a maturity jump from BW to XY
