Ingredients:
1 long fresh green chilli, deseeded, chopped
1 garlic clove, chopped
2/3 cup fresh continental parsley leaves
2/3 cup fresh coriander leaves and stalks
2 tsp ground cumin
1/2 tsp ground cardamom
80ml (1/3 cup) extra virgin olive oil
800g chicken thigh fillets, cut into 3cm pieces
2 large zucchini, thickly sliced
2 red capsicums, deseeded, cut into 1.5 x 4cm strips
1 small red onion, cut into small wedges
Chargrilled lemon wedges, to serve

Step 1
Place the chilli, garlic, parsley, coriander, cumin and cardamom in a small food processor. Process until coarsely chopped. Add 60ml (1 ⁄4 cup) oil. Process until combined. Transfer to a bowl. Season well. Cover and set aside for 15 minutes to develop the flavours.

Step 2
Meanwhile, thread the chicken, zucchini, capsicum and onion onto 12 metal or presoaked bamboo skewers.

Step 3
Transfer two-thirds of the sauce to a small serving bowl and set aside.

Step 4
Preheat a barbecue grill or chargrill pan on medium-high. Add the remaining 1 tbs oil to the remaining sauce. Brush all over the skewers. Cook the skewers, turning and brushing with more of the sauce, for 8-10 minutes or until golden. Serve the skewers with the reserved sauce and chargrilled lemon wedges to squeeze over.

Korean-style BBQ chicken

Ingredients:
2 tbsp soy sauce
2 tbsp mirin seasoning
1 tbsp honey
2 tsp sesame oil
1 tbsp sesame seeds, toasted
1/2 tsp dried chilli flakes (optional)
6 Coles RSPCA Approved Australian Chicken Thigh Fillets
100g vermicelli rice noodles
8 butter lettuce leaves

Picked vegetable
2 carrots, peeled, cut into long matchsticks

1/2 wombok (Chinese cabbage), finely shaved
1/4 cup (60ml) rice wine vinegar
1 tbsp caster sugar
1/4 tsp salt

Step 1
Combine the soy sauce, mirin, honey, oil, sesame seeds and chilli flakes, if using, in a large bowl. Add the chicken and turn to coat. Set aside for 15 mins to develop the flavours.

Step 2
Heat a barbecue grill or chargrill on medium. Drain the chicken, reserving the soy sauce mixture. Cook for 4-5 mins each side or until cooked through. Transfer to a plate. Cover with foil and set aside for 5 mins to rest.

Step 3
Meanwhile, to make the pickled vegetables, combine the carrot, cucumber, wombok, vinegar, sugar and salt in a large bowl. Set aside for 5 mins to soak. Drain well.

Step 4
While the vegetables are soaking, place noodles in a large heatproof bowl. Pour over enough boiling water to cover. Set aside for 5 mins to soak. Refresh under cold water. Drain well.

Step 5
Heat the reserved soy sauce mixture in a saucepan over high heat. Bring to the boil. Reduce heat to medium and simmer, stirring, for 2 mins or until the glaze thickens slightly.

Step 6
Thickly slice the chicken. Arrange the lettuce leaves on a large serving platter. Top with the noodles, pickled vegetables and chicken. Drizzle with the glaze to serve.

Spicy chicken zigni curry

Ingredients:

1 tbsp vegetable oil
1kg skinless chicken thigh fillets, chopped
1 white onion, chopped
3 garlic cloves, crushed
2 sebago potatoes, peeled, chopped
410g can tomato purée
Mutti Polpa Finely Chopped Tomatoes 400g
2 chicken stock cubes
1 1/2 tbsp red wine vinegar
4 hard-boiled eggs, halved
Steamed rice, to serve
Coriander leaves, to serve

Berbere
1 tbsp sweet paprika
1 tsp mixed spice
1 tsp ground coriander
1 tsp ground ginger
1 tsp ground cloves
1/2 tsp ground cardamom
1/4 tsp cayenne pepper

Step 1
Heat 1/2 the oil in a large, deep frying pan over medium-high heat. Cook chicken, in 2 batches, stirring occasionally, for 6 minutes or until golden. Transfer to a heatproof plate.

Step 2
Meanwhile, make Berbere by combining all ingredients in a small bowl.

Step 3
Heat remaining oil in the same pan over medium heat. Add onion. Cook, stirring occasionally, for 5 minutes or until softened. Add garlic and berbere (all the spices). Cook, stirring, for 1 minute or until fragrant. Add potato, tomato purée, chopped tomatoes, stock cubes and vinegar. Bring to a simmer. Season with salt and pepper. Return chicken to pan. Cook, covered, stirring occasionally, for 40 minutes or until chicken is tender.

Step 4
Stir in eggs. Cook for 5 minutes or until heated through. Serve curry with rice, sprinkled with coriander.

White Christmas rocky road

Ingredients:
80g (2 cups) rice bubbles
115g (3/4 cup) dried cranberries
20g freeze-dried raspberries, lightly crushed
300g white marshmallows, halved
20g (1/4 cup) shredded coconut
400g white chocolate, melted, plus 100g, extra, melted

Step 1
Line base and sides of two 6.5 x 25cm bar pans with non-stick baking paper. Combine the rice bubbles, half of the cranberries, half of the raspberries, marshmallow and coconut in a large bowl.

Step 2
Add white chocolate and stir until well combined and coated. Divide mixture evenly between prepared pans, pressing down firmly. Drizzle over the extra white chocolate and sprinkle with remaining cranberries and raspberry. Set aside for 2 hours or until set. Cut into slices to serve.

Cheddar and cumin twists

Ingredients:
1 tsp cumin seeds
1/4 tsp cracked black pepper
1/2 cup finely grated parmesan cheese
2/3 cup grated vintage cheddar cheese
2 sheets frozen ready-rolled puff pastry, partially thawed
1 egg, lightly beaten

Step 1
Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.

Step 2
Combine cumin seeds, pepper, parmesan and cheddar in a bowl. Place 1 sheet pastry on prepared tray. Brush with egg. Sprinkle with half the cumin mixture. Top with remaining pastry sheet. Press down firmly to secure. Brush pastry with egg. Sprinkle evenly with remaining cumin mixture. Cover. Refrigerate for 10 minutes or until pastry is firm.

Step 3
Using a sharp knife, cut pastry in half. Cut each half into 3cm-wide strips. Twist strips. Place on prepared tray. Bake for 12 minutes or until browned and crisp. Transfer to a wire rack to cool. Serve.

Lightsaber cake

Ingredients:
2 x 340g packets golden butter cake mix or 2 quantities Homemade butter cake (see related recipe)

Buttercream icing
250g butter, softened
3 cups icing sugar mixture
2 tbsp milk
Blue and black gel food colourings
2 mini jam rollettes
2 nougat honey logs
1.5 metres licorice strap
3 tsp small silver cachous

Step 1
Preheat oven to 180C/160C fan-forced. Grease a 6cm-deep, 22cm x 32cm (base) rectangular baking pan. Line base and sides with baking paper.

Step 2
Prepare packet cake, following packet directions or Homemade butter cake. Pour into prepared pan. Smooth surface. Bake for 50 minutes or until a skewer inserted in centre of cake comes out clean. Stand in pan for 10 minutes. Turn onto a wire rack to cool.

Step 3
Make Buttercream icing: Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar mixture and milk, beating constantly until combined. Place 1/2 cup icing in a bowl. Tint blue. Tint remaining icing grey with black food colouring. Using a serrated knife, level top of cake. Place cake, cut-side down, onto cake board. Spread top and sides of cake with grey icing. Place 1 swiss roll diagonally on 1 corner of cake to form handle of lightsaber. Cut one-third off the remaining swiss roll on an angle. Discard. Using a little icing, attach uncut side of roll to swiss roll on cake. Spread swiss rolls with grey icing to form a handle. Trim approximately 4cm from 1 nougat roll. Discard. Position nougat rolls, end to end, next to swiss rolls to form lightsaber. Spread nougat roll with blue icing.

Step 4
Cut three 12cm long lengths from licorice strap. Using the picture as a guide, position 1 on the top of the handle and 1 in the middle, to form wide grips. Position remaining length diagonally overlapping the top strap. Cut four 1.5cm x 2.5cm pieces of licorice and position on top half of handle (in between top and middle strap). Cut 10, 4mm wide x 4cm long strips of licorice. Position on bottom half of handle to form thin grips. Cut a 3mm x 22cm long strip of liquorice. Form a coil and position to make the base of the handle. Outline lightsaber with a 3mm x 42cm long strip of licorice. Decorate cake with thin strips of remaining licorice to form 'rays'. Use a star-shaped stencil to create cachous stars. Serve.

Logan:
"Aww James that is so sweet but if Nova is not having the bbq with us what is having?"

James:
"My breast but fist we should force her to try some food then I will feed her."

Logan:
"Do you think that she would want to do it?"

James:
"Nope not one bit but like I said I wouldn't have it any other way I just wish she would let me feed her without running away."

Logan:
"Maybe one day she will but one day you will find out but for now all that you can do is wait in until the time comes."

James
