Semolina Idli

While on our Food Tour in India, in our book - Take A Bite Of The World, we learned how Idli is traditionally made. Today we bring to you a quick and easy to make variant of the same dish - Semolina Idli. While the original recipe calls for rice, lentils and a long fermentation periods, this one is quiet easy and can be wiped up in span of 15-20 mins.

Ingredients:

1/2 cup rawa or semolina

1/2 cup yogurt or curd

1/2 teaspoon salt

1/2 teaspoon baking soda

Microwave safe small bowls

Oil for greasing

Procedure:

1. In a vessel mix the semolina and curd. Make sure they are properly mixed and there are no lumps. Set aside for 10 minutes.

2. Grease the small bowls.

3. After 10 minutes of resting, add salt and soda to the batter and mix as the soda activates. Do not over mix.

4. Place small quantities in each bowl and microwave for 5 minutes.

5. Demould after cooling.

Note:

1. If you have time, mix the semolina and curd and let it rest for 5-6 hours before use.

2. While traditionally idli is had with sambhar or chutney, you can toss them in any gravy of your choice.
