Cold Cheesecake

 Everyone loves a good cheesecake, and what's better is when it's the no bake version aka Cold Cheesecake. This particular recipe requires no agar and is gelatin free.

Ingredients:
For the base -
50 grams digestive biscuits gram
15 grams butter or ghee at room temperature
4 inch pan or vessel
For the cheesecake filling -
135 grams ripe mango, diced
125 grams white chocolate, melted
150 grams cream cheese, softened
35 grams cream

Procedure -
1. Blend the biscuits to make a crumb and incorporate the butter.
2. Press this mixture into a firm layer at the bottom of the pan. Make sure it's even. Set it aside to set.
3. Next, blend the mangoes into a smooth puree and strain.
4. In another vessel, mix the remaining of the cheesecake filling with the mango puree till it's all mixed well together.
5. Pour this mixture over the biscuit base in the pan and put in refrigerator to set over night.
6. Demold only when completely set.

Note -
1. You can decorate with small layer of white chocolate ganache and finely diced mangoes.
2. If you don't have a small pan or vessel, you can even use cupcake trays or paper cups as small moulds.
