Chicken and rice!
Sounds simple enough, right? You just throw the chicken in with the stuff and wham-o, you got a delicious southern style meal! OH BABY CAKE, NO! Not this one. I found this recipe and I'm gonna tell you what the heck is in it and how to make it.
You gotta have skinless chicken breasts (ouch?), tomatoes (this is where it goes wrong. And I love tomatoes, too!), some corn kernels, precooked brown rice, and roasted garlic/herb seasoning. I'm about to gag. Tomatoes with corn and rice, oh god please help me.
Right, right, I must tell you how to make it.
You need 1 1/2lbs of the skinless chicken breasts, 2 small tomatoes chopped into pieces (make 1 cup), 1 package of 8oz precooked brown rice, 2 cups of the corn kernels, thawed if frozen, and lastly, 1 1/2 teaspoons of the roasted garlic/herb seasoning.
Onto the steps now, shall we?
STEP 1. Chop your tomatoes like you HATE THEM (just do it rough ;) ), cut the chicken into small 1/2 inch pieces (make sure to wash your hands after handling the raw meat); throw it all together with the seasoning until blended.
STEP 2. Preheat a non-stick pan on medium-high for 1-2 minutes. Put a little bit of oil in the pan, add the chicken, cook it for 3-4 minutes and stir it occasionally, or until the meat is nicely browned. Next... add the rice, corn, and tomatoes to the pan and cook for 2 minutes.
After that, you can go right ahead and serve it up.
THERE YA HAVE IT! Chicken and rice! Enjoy.
