Cheesy Baked Marble Potatoes
300g marble potatoes
3 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1 tsp garlic powder
1/4 tsp Spanish paprika
1/4 tsp dried rosemary
1/4 tsp dried basil
4 Tbsp salted butter
100g cheddar and mozzarella mix
dried parsley for garnish
1. Preheat your oven to 200C.
2. Properly wash and prepare your marble potatoes. I have cut them in half to make cooking time faster, but you can definitely leave them whole.
3. Drain the water and pat them dry with paper tissues. This is to remove excess moisture.
4. Transfer your marble potatoes into a bowl. Drizzle some olive oil then add all the seasonings: salt, pepper, garlic powder, Spanish paprika, dried rosemary, dried basil. Mix it altogether until combined.
5. Line your baking tray with foil or parchment paper, then transfer your seasoned marble potatoes. Add your butter. I just sliced them into small cubes and sparsely spread them around.
6. Into the oven it goes, and bake it for 15-20 minutes or until a fork easily pierces through the tender potato.
7. Turn off the oven after the potatoes have cooked. Top it with cheeses and put it back into the oven. The residual heat will help melt the cheese.
8. Garnish with some dried parsley and you're done! Ready to serve and enjoy.

We had this dish a few times already, and it never missed. You may definitely change things up with this recipe. I wanted to try baking the potatoes until tender first and smash them on the baking tray, then put it back in the oven for a few more minutes until it gets golden and crispy. I bet it would taste spudtacular.
