Vegan Citrus Cookies
These bright citrus cookies are infused with three different types of citrus juice and zest. Using both the zest and juice makes for a bright, flavorful cookie. These cookies are perfect for any springtime celebration and Easter.
~Ingredients:
-Cookie:
1/2 Cup Coconut Oil, melted and cooled.
3/4 Cup Cane Sugar.
1 Tablespoon Finely Grated Lemon Zest.
1 Tablespoon Finely Grated Lime Zest.
1 Tablespoon Finely Grated Orange Zest.
1 Tablespoon Orange Juice.
1 Tablespoon Lemon Juice.
1 Tablespoon Lime Juice.
1 Teaspoon Pure Vanilla Extract.
1 Teaspoon Cornstarch.
1 1/2 Cups All Purpose Flour.
1 1/2 Teaspoon Baking Powder.
1/2 Teaspoon Salt.
-Glaze:
1 1/2 Cups Powdered Sugar.
1/2 Tablespoon Orange Juice.
1/2 Tablespoon Lemon Juice.
1/2 Tablespoon Lime Juice.
1 Teaspoon Vanilla Extract.
1 Tablespoon Coconut Oil, melted
1 Tablespoon Finely Grated Lemon Zest.
1 Tablespoon Finely Grated Lime Zest.
1 Tablespoon Finely Grated Orange Zest.
Any additional citrus juice, if needed.
~Directions:
Making the Cookies:
Step 1: Preheat the oven to 350 Degrees Fahrenheit. Line a cookie sheet with parchment paper. Set aside.
Step 2: In a small bowl, mix together the orange juice, lemon juice, and the lime juice. Set aside.
Step 3: In a large bowl, Beat together the coconut oil and the cane sugar for about a minute.
Step 4: Add the citrus juices, the zests, vanilla extract and whisk together for a minute more, until combined.
Step 5: Add about half the flour, as well as the cornstarch, salt, and the baking powder, and mix well.
Step 6: Add the remainder of the flour, and mix until a soft dough forms.
Step 7: Scoop about 2 tablespoons of dough onto the cookie sheets in rounded spoonfuls.
Step 8: Flatten the tops gently with your hands. Bake for 10 - 12 minutes, until bottoms are golden brown.
Step 9: Let the cookies cool on the sheets for 3 minutes, then transfer to cooling racks to cool.
Step 10: While the cookies are cooling make the glaze.
Making the Glaze:
Step 11: In a small bowl, mix together the orange juice, lemon juice, and the lime juice. Set aside.
Step 12: Place the powdered sugar in a large bowl and add the juice, vanilla extract and coconut oil and whisk together, until a thick and smooth but slightly liquidy glaze forms.*
Step 13: Drizzle the glaze across the cookies in several lines, then do it again in the other direction.
Step 14: Sprinkle with the zests before the icing sets.
Step 15: Eat and Enjoy!
~Recipe Notes:
*If it is too liquidy than add a little bit of powdered sugar. If it is too thick add a little bit of juice. You are looking for a consistency that you can easily drizzle.
1) We like to add both the zests and the juices to enhance the flavor of the bright flavorful citrus cookie.
