Orange Cupcakes

These cupcakes can be baked for any occasion whether be a picnic, play-date, or a birthday party. Just remember to get your hands on these yummy cupcakes before they disappear!

~Ingredients:

1 1/4 Cup + 2 Tablespoons of All Purpose Flour mixed with 2 Tablespoons of Cornstarch.

3/4 Teaspoon Baking Powder.

A Pinch of Salt.

3/4 Cup Sugar.

Orange Food Color.

1/2 Cup Soften Unsalted Butter.

1 Teaspoon Vanilla Essence.

1/2 Teaspoon Orange Extract.

1 Tablespoon Fresh Orange Zest.

3 1/2 Tablespoon Milk.

1 Cup Heavy Cream.

~Directions:

Step 1: Preheat the oven to 350 degrees fahrenheit and line the pan with cupcake liners.

Step 2: In a bowl sift together the flour, baking powder and salt.

Step 3: Cream softened butter and sugar until light and fluffy.

Step 4: Pour in the extract. Mix well.

Step 5: Add in the sifted flour along with the heavy cream and milk.

Step 6: Add in the orange zest and mix the batter well.

Step 7: Using a spatula scrape down the walls of the bowl and give it one final mix

Step 8Fill cupcake liners about 3/4 with the batter.

Step 9: Place in the oven and bake for about 18-20 minutes

Step 10: Once the cupcakes are done, leave them on the counter to cool.

Step 11: While the cupcakes cool, make the frosting.

Step 12: Divide the heavy cream in half.

Step 13: Add food coloring to half of the heavy cream.

Step 14: Put the frosting in a ziploc bag and cut the corner.

Step 15: Pipe the frosting on the cupcakes.


~Recipe Notes:

This is a very versatile and adaptive recipe. You can adjust the ingredients by substituting oranges with blueberries, bananas or even strawberries to give it a total different flavor. Have a lemon sitting the fridge? How about adding fresh lemon zest to this recipe.
