Gluten Free Peanut Butter Blossom Cookie

Enjoy the same great chocolate and peanut butter cookie taste without the gluten and the egg.

Yields: 36

~Ingredients:

36 Milk Chocolate Kisses.

1 Cup Creamy Peanut Butter.

1/3 Cup Granulated Sugar.

1/3 Cup Packed Light Brown Sugar.

1/2 Teaspoon Vanilla Extract.

1/2 Teaspoon Baking Soda.

1/4 Teaspoon Salt.

1/4 Cup Unsweetened Apple Sauce.

1/3 Cup Granulated Sugar for rolling.

~Directions:

Step 1: Preheat the oven to 350 degrees fahrenheit. Line a cookie sheet with parchemnt paper. Unwrap the candy kisses.

Step 2: Beat together the peanut butter, granulated sugar, brown sugar, vanilla extract, baking soda, and salt in a large bowl.

Step 3: Add in the unsweetened Apple Sauce and beat well.

Step 4: Shape the dough into 36 equal balls about 1 inch.

Step 5: Roll in granulated sugar and place on the ungreased cookie sheet.

Step 7: Bake for about 8 to 10 minutes  or until light browned.

Step 8: Immediately press a chocolate kiss into the center of each cookie.*

Step 9: Remove from the cookie sheet to a wire rack.

Step 10: Cool completely before eating.

*The cookie will crack around edges when you press a chocolate kiss into the center.
