Date Cake
This is the simplest cake recipe one can bake and we can assure you that it's unbelievably moist and tasty.
~Ingredients:
18 Refrigerated Dates (Seeded).
3/4 Cups Soy Milk.
3/4 Cup Sugar.
1/4 Cup Oil.
1/4 Cup Unsweetened Applesauce.
1 Teaspoon Vanilla Extract.
1 Cup All Purpose Flour.
1 Teaspoon Baking Soda.
1/4 Cup Chopped Walnuts.
Handful of Almonds for decoration (About 16 or so).
~Directions:
Step 1: Soak the seeded dates in warm soy milk overnight.
Step 2: Add the sugar to the date mixture and grind it into a smooth paste adding some more milk if necessary.
Step 3: Preheat the oven to 350 degrees. Line a baking pan with a parchment paper.
Step 4: You may use a circle pan too. In a medium size bowl sift together the flour and baking soda and set aside.
Step 5: In a medium size bowl pour the dates mixture and mix in the oil and the applesauce.
Step 5: Stir in the flour mixture little by little. Use a whisk to mix so that lumps form.
Step 6: Add in the walnuts and mix well.
Step 7: Pour the batter into the pan, arrange the almonds in a pattern and bake for 35 - 40 minutes or until a toothpick inserted in the center comes out clean.
Step 8: Transfer the cake pan to a wire cooling rack. Leave it there for at least 10 - 15 minutes before you take the cake out of the pan.
Step 9: Then leave the cake on the wire rack for another 15 - 30 minutes before you slice into this cake.
Step 10: Serve and Enjoy!
