Chocolate Strawberry Cheesecake Bites
A perfect bite of sweet and creamy strawberry cheesecake inside a dark chocolate shell.
~Ingredients:
-Cheesecake:
3/4 Cup Raw Cashews, soaked in water for at least 4 hours.
2 Tablespoons Coconut Oil.
1/3 Cup Strawberries.*
3 - 4 Tablespoons Maple Syrup.
1 Teaspoon Vanilla Extract.
-Chocolate Shell:
1/2 Cup Dark Chocolate.**
-Topping:
Freeze Dried Strawberries, crushed.
~Directions:
-Making the Cheesecake:
Step 1: Drain the soaked cashews then put it in a blender.
Step 2: Next add in the coconut oil, the strawberries, maple syrup, and the vanilla and blend until smooth and creamy.
Step 3: If it's not pink enough, add a couple more strawberries.
Step 4: Taste and adjust the sweetness to your liking.
Step 5: Line a loaf pan with clear wrap.
Step 6: Pour the cheesecake into the loaf pan.
Step 7: Cover with some more clear wrap and place in freezer.
Step 8: Freeze until completely solid.
Step 9: Once completely frozen, remove from loaf pan, and cut into 32 squares.
Step 10: Place back in the the freezer on a parchment line baking tray.
-Making the Dark Chocolate:
Step 11: Put the chocolate chips into a microwave safe bowl.
Step 12: Microwave the chocolate on medium power for 1 minute.
Step 13: Stir the chocolate with a rubber spatula or a spoon.
Step 14: Continue microwaving the chocolate at 10 to 15 second intervals, stirring between each one.
Step 15: Once the chocolate is mostly melted, take the bowl out of the microwave, and set it own onto a heat safe surface.
Step 16: Continue stirring the chocolate, scrapping the bottom and sides of the bowl often, until the chocolate is smooth and no chunks remain.
Step 17: Remove the cheesecake bites from the freezer.
Step 18: One by one dunk them into the chocolate and get it completely coated, place on baking tray, and sprinkle with freeze dried strawberries.
Step 19: Repeat with the rest of your cheesecake bites.
Step 20: Place back in the freezer until the chocolate hardens.
Step 21: Alternatively, you can also drizzle all the cheesecake bites with dark chocolate, instead of dip it in the dark chocolate.
Step 22: Store in the freezer when not serving.
Step 23: Let them thaw for a few minutes before enjoying.
Step 24: Eat and Enjoy!
~Recipe Notes:
*You can use either fresh strawberries or the freeze dried strawberries. We used the freeze dried strawberries.
**You can use either dark chocolate baking bars or dark chocolate chips. We used the dark chocolate chips.
