Bloody Chocolate Cups (Vegan & Gluten Free)
These Bloody Cups are like Peanut Butter Cups - but these are filled with a raspberry sauce - making it the perfect treat for Halloween! They are vegan, gluten-free and only need 3 ingredients - the ideal last minute recipe.
~Ingredients:
1 Cup Frozen Raspberries.*
1 Tablespoon Maple Syrup.**
1 Cup + 3/4 Chocolate Chips.
~Directions:
Step 1: Line the cupcake tray with liners. Set aside.
Step 2: Heat the frozen raspberries in a small pot on medium - high heat until soft, mash the raspberries until there are no large chunks anymore and add the maple syrup. Give it a mix and set aside to cool.
Step 3: In a double boiler, melt 1 cup of the chocolate.
Step 4: Place about 1 1/2 teaspoon of melted chocolate in the cupcake liners and tilt them, so the chocolate spreads to the sides. Repeat for all the cupcake liners and place it into the fridge for a few minutes or until the chocolate hardens.
Step 5: Melt 3/4 cup of chocolate chips in the double boiler.
Step 6: Meanwhile add about one teaspoon of the raspberry filling into the chocolate coated cupcake liners (place it in the middle).
Step 7: Once the chocolate has melted, pour it over the raspberry filling. Tilt it a bit so the top is covered with the chocolate completely.
Step 8: Let it harden in the fridge for about 5 minutes.
Step 9: Once the chocolate is hard, carefully remove the cupcake liners and serve.
Step 10: Eat and Enjoy!
~Recipe Notes:
*You can use strawberry or any other fruit if desired.
**You can use either rice syrup or agave syrup instead of maple syrup.
1) Keep them in the fridge when not serving!
