Rendang is a dish that originates from the West Sumatera of Indonesia. Rendang is also a traditional dish using coconut milk and beef as the main ingredients. In addition, Rendang is mentioned in many classical Malay literature, for example Hikayat Amir Hamzah. One of the special thing about Rendang is the longer it is being cooked the longer it will taste more delicious, the colors will be blacken and will increasingly dry. Besides, there are a lot of kinds of Rendang nowadays, when people are more creative with Rendang Jackfruit (Rendang Cubadak), Rendang egg, potato Rendang, Rendang lung, etc.

The history of Rendang can be traced to the Sumatran Minangkabau region. Rendang has been a part of their daily life and traditional ceremonies. Rendang has spread to Malay's cultures, Mandailing, Riau, Jambi, Malaca and Negeri Sembilan - where a big amount of overseas Minangkabau live. Nowadays, Rendang is considered as a local dish in both Sumatra and Malay peninsula. Rendang first began to spread when Minangkabau merchants and migrant workers began to trade and migrate to Malaca in the 16th century. When they traveled to Malaca, Rendang was the best food for long journeys. Rendang is widely spread because of migrating culture of Minangkabau people.

When they started to work, some of the migrants opened Padang Restaurant to introduce Rendang and popularize others Padang food across Indonesia, Malaysia, Singapore, as far as Europe and the United States. People may misjudge the Rendang with others because there are stages of cooking meat in spicy coconut milk from the soupy most wet to most dry: Gulai-Kailo-Rendang. We can realize Rendang by looking at its color: Gulai has light yellow, Kailo has brown, and Rendang is dark brown. However, there are two types of Rendang, which are commonly found: wet and dry.

Beef of course, is the most necessary ingredient, however, chicken is also acceptable and for those who are vegetarians, there is a recipe for vegetarian Rendang. All you need is to prepare required ingredients for instance coconut milk, beef, chili and spices.

Rendang has 4 main ingredients, which symbolize the whole society of Minangkabau:

- Dagiang (meat), symbolize "Niniak Mamak": Traditional clan leaders; such as datuk, nobles, royalties or revered elders.

- Karambia (coconut), symbolize "Cadiak Pandai": Intellectuals such as teachers, poets and writers

- Lado (chilli), symbolize "Alim Ulama": Clerics, ulama and religious leader. The hotness of chili symbolize the strict sharia

- Pemasak (spices), symbolize the rest of Minangkabau society.

This most delicious and popular dish in the world usually being served in some special events like weddings, ceremonies and to honor guests. In fact, the dish is simple, however, in order to create a traditional Indonesian dish, technique is required. We want you to be aware that a successful beef Rendang will have no sauce and if you are the type people who love perfection, I recommend eating Rendang the next day for better taste.
