Growing up with Celiac disease hasn't been the easiest thing in the world.
Since the tender age of nine, I haven't eaten a single donut or piece of bread or pizza made with one of the most common ingredients known to man: wheat.
For all of you that don't know, Celiacs is a chronic [ie lifelong] genetic autoimmune disorder where one's intestines can't process the protein gluten that's found in wheat, rye, barley, and some oats.
So yeah, for me, that "gluten free" thing isn't me being annoying or following the newest health trends (gluten free stuff is expensive, man!!).
Anyhow, as a result, I don't eat a lot of sandwiches.
But what I do eat is a lot of lettuce wraps because a whole lot of sandwich fixings (minus peanut butter and jelly and stuff like that) can be stuffed in lettuce leaves and eaten right up.
As a student, I tend to bring a lot of these to school for lunch. A current favorite is chicken (canned chicken if you're lazy like me or chopped rotisserie or grilled or however the hell you like your chicken) mixed with mayonnaise, salt, pepper, garlic powder, halved grapes, chopped onions and walnuts.
Stick some of that on a large lettuce leaf (we usually use romaine or iceberg) and roll it up. Yay. A sandwich.
But yeah, I stick a lot of stuff in lettuce and call it a sandwich. Turkey with pepper jack and horseradish mustard, roast beef and cheddar.... the list just continues.
Back in my bread eating days, my favorite bread was made by a regional chain that has stores all over the northwestern United States.
It was called potato bread, and was made with just that: potato starch and bleached white flour.
