Yukihira style beef stew
The Beef Stew is a dish made by Sōma Yukihira when he was preparing for his during the 43rd Annual Tōtsuki Autumn Election's Main Tournament against Subaru Mimasaka but was later dropped as the dish did not impress Erina Nakiri. It is Restaurant Yukihira's 5th dish in the secret menu and the first dish Soma's father had given a stamp of approval.
Servings: Around 4

Ingredients:
.800g Beef rib roast
.1 onion
.1 tomato
.1/2 carrot
.1/2 celery stalk
.2 Tbsp each butter and canola oil
.400 cc Red wine
.1 Tablespoon Tomato ketchup
.1 tablespoon granulated consommé
.500 cc water
.3 bay leaves
.1 can of Demi-glacé sauce (around 700 grams)
.1 Tablespoon of white miso
. Salt and pepper (amount depending on personal taste)
Garniture (French for garnish)
.1 head of broccoli
.1 carrot
.100 grams string beans
Method:
1. Cut the onion, carrot, tomato and celery into cubes (approximately 1cm on a side). Cut the rib roast into bite size pieces and rub with salt and pepper
2. Heat 1 Tablespoon each of butter and canola oil in a frying pan, brown the rib roast on high heat until brown on all sides, remove from heat and set to the side
3. Pour the red wine into the pan from (1) and reduce down to one third
4. Heat the remaining butter and oil in a medium to large stew pot. Throughly sauté the onion celery and carrot until tender
5. Add the 1 Tablespoon Tomato ketchup, 1 tablespoon granulated consommé, 500 cc water, 3 bay leaves, the tomato and the rib roast into step 4 and heat till boiling, skim any scum off the top and pour in the can of Demi glacé sauce.
6. Heat to boiling and reduce heat to low, put a lid on the pot and let it simmer for two hours stirring occasionally.
7. Remove only the meat from the pot and strain the remaining liquid. Return the resulting sauce to the pot and heat until warm
8. Return the meat to the pot, stir in the white miso and season to taste with salt and pepper
9. Make the Garniture, cut the broccoli into florets, de-string the string beans, peel and cut the carrot into rounds. Boil each in salted water until tender
10. Ladle the beef stew from the pot into a bowl and decorate with the ingredients in step 9 then you are done!
Notes:
.cc stands for cubic centimetres, and 1 cc = 1 millilitre
. If beef ribs is not for you, that's fine you can use other types of beefs that are thickly cut. (Try to avoid using beef mince and thinly sliced beef)
. If you are worried around the alcohol in the red wine, I can assure you the alcohol is evaporates when you cook it so if would be fine but if you are still uneasy than you can substitute it with Grape, pomegranate, or cranberry juice, Chicken, beef, or vegetable stock or red wine vinegar.
. If you cannot fin Demi glacé sauce for some reason then: To create the equivalent of 1 cup demi-glace simmer 2 cups beef broth and 1 tpsp. of butter in a pan until the broth is reduced by half. Dissolve 1 tsp. of arrowroot or cornstarch in cold water and add to the beef broth, stirring constantly. Continue to simmer until the mixture is thickened. If the mixture is too thick, add sherry or balsamic vinegar 1/8 tsp. at a time, stirring after each addition until the sauce is the desired consistency. . One fresh bay leaf = two dried leaves
One dried bay leaf = 1/4 tsp. crushed bay leaf
One fresh bay leaf = 1/2 tsp. crushed bay leaf
. In step one if you have your own seasoning that you think will work with the beef, don't be afraid to try it out.
Important note:
. You can garnish with bacon, button mushrooms and onions instead of broccoli, carrots and beans to make the Beef Stew with Bacon Garnish
.Vegetarians
. To replace the beef ribs you may use Tempeh, Seitan and there is a vegan recipe for baked ribs: http://www.baked-in.com/2014/06/30/vegan-barbecue-ribs/
Please be mindful that if you are going to use any of these replacements that the recipe many vary slightly. So here are a few points you may wish to try:
1. Take out the beef parts in the recipe and Add the vegan or vegetarian "beef" on top after you have prepared everything as normal.
2. Add maybe a cube or half a cube of vegetable stock cubes (or any suitable seasoning) to the pot to add more flavour if you wish to.
This many alter the recipe a little but it's pretty hard to find vegetarian and vegan substitutes but if anyone has any ideas I'm happy to include them, that would help me a lot because I'm not vegetarian or vegan so this is quite hard for me x.x sorry, I am trying my hardest to find substitutes though.
