Soma's souffle omelet
This breakfast course is main by Sōma for the buffet challenge at camp in ep 13
Servings: Around 2 people
Ingredients:
[Tomato sauce]
.2 Tomatoes
.1 clove garlic
.1 teaspoon granulated consomme
.3 tablespoons red wine
.2 tablespoons olive oil
[Egg]
.4 eggs
.2 tablespoons of butter
.Diced parsley, salt, pepper
Method:
1. Make the tomato sauce. Dice the tomatoes and finely chop the garlic.
2. Heat the olive oil in a frying pan and saute the garlic. Once the garlic is fragrant, add the tomatoes and saute until tender.
3. Add the granulated consomme and red wine to step 2 and simmer on medium heat for about 10 mins, or until reduced by half. This completes the sauce.
4. While the sauce in step 3 is still simmering, crack the eggs into a bowl and throughly whip with an electric mixer until thick enough that ripples remain on the surface.
5. Melt 1 tablespoon of butter in a frying pan and add half of the mixture from step 4
6. Cook on medium heat for about one minute, and then turn off the heat, cover and let it steam for 1 min. Fold in half and plate. Repeat for the other half of the mixture.
7. Season step 3 with salt and pepper to taste. Pour over step 6, top with diced parsley and done!
Notes:
.You can use margarine instead of butter.
.Remember to eat it right away or the omelet will change it's shape and not rise up
.Be careful not to over or undercook the egg
.You can add other herbs on top
As landsofnowhere has mentioned in the comment you actually don't need the sugar to make the meringue work, and there are different ways to making this. You can separate the yolk and the egg whites, so you mix the egg whites first till fluffy then add the egg yolks in. And there are even ways of making this without the wine.
