Pepper Mackerel (Spanish) with a Cabbage Purée Garnish




This main course is made by Isshiki at Souma's welcome party at Polar star Domitory in ep 4

Servings: Around 2 people

Ingredients:

.2 pieces of spanish mackerel fillet

.200g of cabbage

.2 tablespoons of water

.1 tablespoon of butter

.2 tablespoons of fresh cream

.Half a teaspoon of consomme granule

.2 tablespoons each of sake, mirin and soy sauce

.1 tablespoon of salad oil

.Suitable amount of salt and pepper, Japanese pepper powder and leaf buds

Method:

1. Cut the cabbage into chunks and put it in a heat resistance bowl. Add water, wrap it gently, and heat it in the microwave (4 mins is a 600w microwave)

2. Put the cabbage from step 1 together with butter, fresh cream and consomme granule in a food processor and mix it until it's like a puree. Season it with salt and pepper.

3. Heat the salad oil in a frying pan and fry the mackerel, starting with the skin side, in it. Once both sides are fried, add sake, mirin and soy sauce and mix everything on a high flame.

4. Boil it down until there's little juice, and, once that happens, sprinkle it with Japanese pepper powder and move it to a dish. Use leaf bud previously beaten by hand as topping and the puree from step 2 as Garish and it's done!

Notes:

.When it says Spanish Mackerel fillet it just normal mackerel fillet

.If you don't like or don't have butter, margarine is fine.

.If you do not have Japanese pepper normal pepper is fine

.Eating this with Japanese tea it great!

.VEGETARIANS: For those of you who who can't eat fish you can use tofu but it won't taste as good
