Nikumi's Dongpo-pork-curry bowl
This main course is made by Nikumi aka Mito at the Autumn election where the main theme was curry. In ep 23
Serving: 2
Ingredients:
.300g pork belly
.1 table spoon canola oil
.1000cc water
.1/2 tablespoon of chicken bouillon
.1 large spring onion
.1 head bok choy (leaf part)
.2 thumbs ginger root
.1 piece star anise
.5 sichuan peppercorn
.100cc shaoxing wine
.2 tablespoons each sugar and soy sauce
.1 tablespoon each oyster sauce and curry powder
.2 bowls of cooked rice
.Soy sauce, oyster sauce, potato starch, rocksalt, sichuan peppercorn oil
Method:
1. Cut the pork belly into five centimetre blocks. Submerge in plenty of water and boil for 10 mins until soft.
2. Cut off the green part of the spring onion and finely chop it. Julienne the white part and soak in cold water for 10 mins. Thinly slice the ginger, chop the bok choy into quarters and blanch.
3. Smear the pork belly from step one in a frying pan until the edges are golden brown.
4. Put water and chicken bouillon in a pressure cooker and heat until boiling. Add the meat from step 3, the ginger, the star anise, the sichuan peppercorn and the chopped green part of the spring onion, and then close the lid and simmer under pressure for 20 mins
5. Open the lid, add shaoxing wine, sugar, soy sauce, oyster sauce and curry powder, close and simmer for another fifteen mins. Season to taste with soy sauce and oyster sauce. Thicken with potato starch.
6. Season the rice to taste with rock salt and peppercorn flavouring oil. Put even portions in two bowls and top with everything from step 5. Garnish with Julienned spring onion and bok choy then Done!
Notes:
. Before you garnish the Julienned spring onion you can fry it in oil for a bit to get rid of the strong flavour
.You may take the ginger out if you really wish
.Instead of bok choy you can use other asian leafs/vegetables (But only the ones to make soup with)
.Always have a little taste of the sauce you are making because sometimes you can add too much soy sauce
.VEGETARIANS: Instead of pork belly you could use some fried tofu or fish fillet would be best
