Chicken leg meat grilled with spices ~Garnished with green sauce~


This main course is made by Takumi and Isami Aldini in ep 8 when they were up against Megumi and Souma.

Servings: Around 2 people

Ingredients:

.1 piece of chicken leg meat

.Half a teaspoon of sesame oil

.4 tablespoons of sake

.1 tablespoon of marin

.1 teaspoon of salt

.8 perilla leaves

.100g of green spring onion

.A quarter of a teaspoon of yuzukoshou

.15g of toasted sesame seed

.1 tablespoon of salted fish entrails

.A suitable amount of soy sauce

.A suitable amount of shiraga negi (Spring onion cut into thin strips)

Method:

1. Remove the tendons of the chicken leg meat and stick the skin side with a fork in various places

2. Put sake, mirin, salt and the chicken leg meat from step 1 in a plastic bag and knead it firmly, then let it rest in the fridge for more than an hour

3. Heat sesame oil in a frying pan and begin frying the chicken leg meat with the skin side. Once it's browned, flip it over and fry the other side for 3 mins. Spread parchment paper on a baking sheet and put the meat on it, skin side up, then cooking it in the oven that was preheated to 220 decree C for 20 mins or until cooked

4. Making the Japanese style salsa verde- Put perilla leaves, green spring onion, Yuzukoshou, sesame seed, salted fish entrails in a food processor and mix it, adjusting the flavour with soy sauce

5. Cut the chicken legs from step 3 into slices, put plenty of shiraga negi on them, garnish the dish with the Japanese style salsa verde, and It's done! 

Notes:

.Chicken breast is also fine

.You can use any oil if you don't have sesame oil

.Instead of Perilla leaves you can use mint

.Sprinkle the dish with herbs if desire 

.VEGETARIANS: You can use fake chicken that is made out of soy beans or you can use fish fillet  and feel free to use fried tofu if wish
