Ships to be canon

Since I have no idea how FT is going to end, I'm going to answer this based on a situation where it ends normally in the current timeline. Meaning that we don't get a timeskip before a final chapter which shows the guild members a couple of years down the road, because that would change a lot of things.

Nalu: I think they have the highest chance of becoming canon. Their development has been slow throughout the manga, but there has definitely been a gradual progression. Their behaviour towards each other has exceeded the boundaries of being normal friends, but it's not quite that of a couple yet.

It seems to me that Natsu and Lucy are aware of how important the other party means to them, but I don't know if they have thought about whether these feelings are romantic ones. I don't think it's time for them to become canon yet since there are more important things to handle now (like helping Makarov, and having Acnologia and Zeref to face later), but I can see it happening close to the end of the manga. Perhaps the struggle with END would serve as a good push for them to acknowledge their feelings and become canon.

Natsu and Lucy are the main characters in the series, and given their importance, I don't think they will just remain implied.

Gruvia: I see a very high chance of them becoming canon as well. Juvia's intentions towards Gray have been very clear from the time she met him, and I think Gray has been a lot more receptive towards her after the incident with Silver as well. There has been a lot of teasing with this pairing, and I believe that Mashima-sensei would give a proper resolution rather than leaving their relationship up to the reader's inference.

However, given Gray's character, I don't think that he'll openly declare that he loves Juvia. If they become canon, I think it will happen subtly. We might only find out when someone asks them about it, and Gray just doesn't deny that Juvia is his girlfriend (or something along those lines). Or maybe Juvia will just declare that Gray is officially her boyfriend one day and ask the other girls to not get too close to him.

Jerza: I would personally love to see them becoming canon, but my greatest concern is the lack of panel time for Jellal. It is clear how Jellal and Erza feel about each other, and I don't think anyone else can take that place. Jellal is currently in the process of seeking his redemption, and I believe that Erza will wait for him.

I think that Jerza might just remain implied. For Jerza to become canon, Jellal has to move on from his past and make an appearance in the manga before anything can happen. While there is the possibility of Jellal making future appearances in the manga, I wonder if (1) he would have already found his redemption by then, (2) there is time for enough Jerza moments and a little more development before they become canon and (3) the situation in the manga allows for that.

I want to see Jerza becoming canon, but I'm mentally prepared for them to remain as an implied couple. I really hope I'm wrong on this though.

Gale: We've gotten hints about possible romantic feelings between these two in the manga, and Juvia's imagination of the both of them kissing shows that she thinks of them that way as well. However, my greatest concern with them is the lack of panel time. Levy doesn't appear much. Gajeel also usually doesn't get as much panel time as compared to Team Natsu, and I feel that this is the greatest factor holding them back from becoming canon (unless they got together during their time together in the council...).

Elfever: They get even less panel time than Gale, and I think they will just remain implied (unless they met and got together during the one-year timeskip, but traveled separately after that). It's clear where they stand with each other though. Even if we get to see more of them, I think these moments would likely be similar to what has been shown in the manga so far, and not something that pushes them to become canon.

Mashima-sensei knows who the fans ship, and I think that he'll make the pairings canon if it fits into the plot without making it seem forced. He's said that he always thinks about what the fans want.

Perhaps the best way to make as many fans as possible happy though, is to have one or two couples becoming canon in the main story, and have the last chapter or epilogue set some time in the future (to allow for more ships becoming canon). That way, we can get an official confirmation of which parings ended up together, and we might see even more than what I've listed above.
