"Heeeeello! I’m your host, Dionysus! Today on Mr. D’s Mad Cooking Show, we have a special guest, Gavin Underhill.”
There is a pause. “...Grover Underwood.” Applause sounds around the room. “Today he will show us how to make Crispy Potatoes with Vegan Nacho Sauce. He says it takes 45 minutes to make, meaning it would be great for dinner time. Now Mr. Underwood, would you please show us how to make this?”
The camera zooms into Grover’s cooking area.
“Sure thing. Um.. for this you will need,” Grover looks down at his recipe, “two pounds of mixed baby potatoes, halved; 3 tablespoons canola oil; 1 cup raw unsalted cashews, soaked overnight and drained; 1 cup raw unsalted cashews, soaked overnight and drained; 3 tablespoons lemon juice; 1/2 teaspoons chili powder; 1/2 teaspoons ground cumin; 1/2 teaspoons sweet paprika; 1/2 teaspoons garlic powder; 1 teaspoons coarse sea salt; 1/4 cup nutritional yeast; 1/2 jalapeño chili, seeded and chopped.”
“The first thing you should do is preheat your oven to 450 degrees Fahrenheit. Then toss in the potatoes with oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. On a rimmed baking sheet, spread the potatoes evenly; roast for 30 minutes until golden and crispy, stirring once,” he says as he walks to the oven with already seasoned potatoes.
“It takes 30 minutes, but I won’t leave you waiting. I made some earlier.” The crowd laughs. “Meanwhile, put in the blender the puree cashews, lemon juice, chili powder, cumin, paprika, garlic powder, sea salt, nutritional yeast, and jalapeño with 1 cup water until smooth.”
“Then transfer that to a 2-quart saucepan and heat on medium-low for 5 minutes or until warm, stirring occasionally. This makes about 1 2/3 cups. Transfer it to a bowl and serve with roasted potatoes. You can refrigerate remaining sauce for up to 1 day. It’s also good with tortilla chips, roasted cauliflower, et cetera.”
“I make this all the time for my wife Juniper and my three children, Georgie, Angie, and Codie.”
Some of the girls in the crowd boo as they have a crush on him.
Mr. D ignores them and says, “Well, it was nice to have you teach us how to make amazing food. Thank you for coming.” He turns to the crowd, “And thank you all for watching!”
And the curtains go down, blocking the cheering crowd from view.
