17. Sabudana Khichdi
A very healthy, tasty and easy to make dish. It is originally from Maharashtra. It can be used while fasting all you have is to avoid onions.
Ingredients
Sago or saboodana 250 gms
Potatoes 2 cut into small peices Onions 2 (chopped) (optional)
Ground nuts 2tbsp or 15-20
Curry patta 15 leaves
Mustard seeds 1tsp
Green chillies 1 cut length wise
Oil 2tbsp
Salt to taste
Red chilli powder 1/2 tsp
Lemon juice 2 tbsp
Green coriander for garnishing
Method
• Wash and soak saboodana in water for atleast 2 hours. Water should be just above sabodana level.
• I soak it overnight. Cover it and keep in refrigerator if you are soaking overnight.
• Heat oil in a kadhai. add mustard seeds to it. When they crackle, add ground nuts and stir fry.
• Add green chillies, curry patta. Fry for 20 sec.
• Add onions and stir fry till they are light brown in color.
• Add potatoes and salt. Cover it and cook till potatoes are soft.
• Add red chilli powder and stir fry for 30 seconds
• Add soaked saboodana. Mix gently. Cook covered with a lid for 5 mins.
• Stir and mix well cook covered for 5 mins. Turn off the gas.
• Add lemon juice. Mix well, serve, garnished with coriander leaves. Serve hot.
TIP: if you are fasting, can make it without onions.l
