Chloroform (The stuff they usually use in movies to knock out characters when they're kidnapping them) actually takes between 2-5mins to actually knock someone unconscious.
It used to be used as an anesthetic for surgeries bfore they discovered it is bad for the liver (I think, I don't really remember the organ-).
You don't necessarily need to *inhale* chloroform for it to make effect, you just need to get it in your system in any kind of way (which includes getting stabbed with something covered in chloroform or just eating it).
