Mint Oreo Truffles

Only 3 ingredients for an amazing bite sized, no-bake dessert that is perfect for St. Patrick's Day! Made in minutes and so delicious, no one can guess they're made with Oreo cookies!

~Ingredients:

1 Package Mint Oreo Cookies, finely crushed.

8 oz Cream Cheese, softened.

2 Package Chocolate Candy Melts.*

2 Cups Mint Green Chocolate Chips.**

2 Cups Semi Sweet Chocolate Chips.

Green Sprinkles.***

~Directions:

Step 1: Line a cookie tray with parchment paper. Set aside.

Step 2: Crush the oreo cookies in a small food processor. Use a fork to stir the mixture up between blends to get the finest consistency.

Step 3: Mix the crumbs with the cream cheese until well blended.

Step 4: Using a cookie scoop to measure out about 1 1/2 tablespoon of the cookie mixture and roll each scoop into a ball.

Step 5: Place the oreo balls on a the prepared cookie tray.

Step 6: Freeze the balls for about 20 - 30 minutes before dipping.****

Step 7: Melt both of the chocolate candy melts in the microwave for about 1 minute 20 seconds.

Step 8: Stir gently until smooth, returning to the microwave in 15 second increments, if needed.

Step 9: Dip each ball in the chocolates and place back on the lined tray.

Step 10: Place 1 tablespoon green chocolate chips in a sandwich bag.

Step 11: Microwave for 40 seconds. Gently massage the bag to ensure the chocolate chips are fully melted.

Step 12: Snip a tiny corner of the bag and drizzle chocolate onto each Oreo ball.

Step 13: Sprinkle with green sprinkles.

Step 14: Eat and Enjoy!

****Don't skip this step! The balls need to be chilled before you dip them in the melted chocolate. If they aren't chilled, you will end up with a lot of crumbs in your melting chocolate and they won't look quite as pretty! You're welcome to divide the directions into 2 parts and make the truffles the day or night before, then dip them in chocolate the next day.
