Graduation Cookie
Perfect cookie to make for the those who are graduating this year.
Holiday - Occasion: Graduation.
~Ingredients:
1/3 Cup butter or margarine softened.
1/3 Cup Shortening.
3/4 Cup packed brown sugar.
1 Teaspoon Baking Powder.
1/4 Teaspoon Salt
1/2 Teaspoon Vanilla
1 Egg
1 1/2 Cups All Purpose Flour.
1/4 Cup Whole Wheat Flour.
3/4 Cup Semisweet Chocolate Chips, melted.
~Directions:
Step 1: Beat the butter, shortening and brown sugar until creamy.
Step 2: Beat in baking powder, salt, vanilla and egg.
Step 3: Stir in the flours.
Step 4: Divide the dough in half.
Step 5: Cover and refrigerate for about two hours.
Step 6: Heat the oven to 375 degrees Fahrenheit.
Step 7: Roll each half of the dough into 15 by 6 inch rectangles on a floured surface.
Step 8: Cut lengthwise into three 15 by 2 inch strips, then cut crosswise into 7.5 by 2 inch strips.
Step 9: Working quickly, spread about 1 teaspoon melted chocolate over one strip to within 1/4 inch of one long side.
Step 10: Gently roll up, starting at the long side with chocolate.
Step 11: Repeat with the remaining cookie strips and chocolate.
Step 12: Cut each roll into 2 pieces; roll each cookie slightly to shape.
Step 13: On an ungreased cookie sheet, place cookies about 1 inch apart.
Step 14: Bake 8 to 10 minutes or until edges are firm.
Step 15: Cool 1 minute; remove to cooling rack.
Step 16: Cool completely.
Step 17: Place remaining chocolate in plastic bag.*
Step 18: Cut hole in a corner and squeeze out chocolate to look like ties.
Step 19: Place on the cookie.
Step 20: Refrigerate for about an hour.
*You can also use a Ziploc in the same way.
