Coca Cola Chocolate Cupcakes

These cupcakes will go down in history as the most incredible chocolate cupcakes ever. The flavor is so delicious. The chocolate is deepened by the flavor of Coca-Cola. And these babies are super moist too with the right amount of sweetness.

Holiday: Christmas.

~Ingredients:

-Cupcakes:

1/4 Unsalted Butter, room temperature.

1/4 Cup Vegetable Oil.

1/2 Cup Granulated Sugar.

1/2 Cup Light Brown Sugar, packed.

1 Large Egg, room temperature.

1 1/4 Cup All Purpose flour.

1/4 Cup Cocoa Powder.

1/2 Teaspoon Baking Soda.

1/4 Teaspoon Salt.

1 Cup Coca Cola.

1 Teaspoon Pure Vanilla Extract.

-Frosting:

1 Cup Unsalted Butter, room temperature.

Pinch of Salt.

3 Cups confectioners Sugar.

1/4 Teaspoon Peppermint Extract.

2 Tablespoons Heavy Cream.

Garnish with 2 candy canes, crushed peppermint and round peppermints for cupcake toppings.*

~Directions:

Step 1: Preheat oven to 350 degrees Fahrenheit and line the cupcake / muffin tray.

Step 2: Beat together the butter, oil and both of the sugars together on high speed until light and fluffy.

Step 3: Add in the egg and mix. Set aside.

Step 4: In a separate bowl, whisk together flour, cocoa powder, baking soda and salt.

Step 5: Turn mixer speed to low and add half of the flour mixture and combine the new mixture.

Step 6: Next add half of the Coca Cola.

Step 7: Combine the final half of the flour mixture and then add the remaining Coca Cola.

Step 8: Finally add in the vanilla extract and make sure the batter is well mixed.

Step 9: Scoop batter into the liners filling 2/3's of the way.

Step 10: Bake the cupcakes for about 15 20 minutes or until a toothpick inserted comes out clean.**

Step 11: Cool the cupcakes to room temperature.

Making the Frosting

Step 12Add the butter and salt and mix at medium speed.

Step 13: Turn the mixer speed to low and slowly add the powdered sugar in small proportions until all of it is added, then turn the speed to high to combine all the way through.

Step 14: Add the peppermint extract then the heavy cream and mix until the batter is nice and fluffy.

Step 15: Add the frosting batter in a plastic bag or a ziploc bag, cut a corner and pipe the frosting on top of the cupcakes.

Step 16: Sprinkle with crushed candy canes then top each cupcake with a round peppermint candy and serve.

~Recipe Notes:

*You can use either candy canes or the peppermint candy.

**Be careful not to over bake the cupcakes.
