First of all, Emily and Bellona are the only two hybrids alive. Bellona was taken as prisoner since they couldn't kill her. This is because Bellona and I, no matter which AU, are 'Moon Sisters'. Meaning you'd have to kill both of us to kill one of us.

Emily's, or AA's, jaw is cracked because the guard didn't need the locals knowing what Asgore ordered them to do. You could guess that Asgore ordered them to kill the pack, every single hybrid alive.

Why was AA forced to watch this and why isn't she dead?

Well, she isn't dead since Bellona isn't dead. AA was forced to watch this because she was the next alpha in line. And yes, everyone was murdered in different ways. AA even had to watch some hybrids get rapped in front of her.

Alphys, a monster who supported hybrids but had to work for Asgore, was forced to make a chain that hybrids could not break. AA was chained down to a tree and had to watch this. Afterwards, they burnt the hybrids' homes.

AA was lucky enough that the fires didn't spread towards her and that rain poured down before anything serious could have happened. AA was soon discovered by Grillby, a supporter of hybrids and a retired soldier, and taken to shelter.

AA then swore that she'd avenge her pack by having Asgore hear or see his royal guards get killed. This includes his wife and son. AA spared Chara since Chara found out what her (yes, her) father did. Chara offered to help AA by giving her the locations of every guardsmen.
