Tomato Rice [80]
INGREDIENTS :
1 bowl cooked basmati rice
¼ chopped onion
1 tsp grated ginger
3 medium size ripe juicy tomatoes
2 slit green chillies
½ tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
handful chopped finely mint leaves
2 tbsp finely chopped coriander leaves
salt as needed
TEMPERING :
▶1 tsp mustard seeds
▶1 tsp jeera
▶½ tsp urad dal
▶1 tsp chana dal
10 - 12 cashews
few curry leaves
INSTRUCTIONS :
firstly, heat oil in a pan, add mustard seeds, jeera, urad dal, chana dal and few curry leaves further more, fry for a few seconds and add cashews, chilli and ginger and fry for few more seconds. also once the cashews turn golden brown add onions. saute till onions become slightly golden brown. then add chopped tomatoes and cook for 5 minutes add turmeric powder, chilli powder, coriander powder, salt and mix well. additionally add handful of pudina leaves and mix well further cook till tomatoes become mushy. now add 1 bowl of cooked basmati rice to mushy tomatoes and mix gently further close the lid of pan and cook the rice for 2-3 minutes finally, tomato rice is ready. serve it with curd or raita.
