Punjabi Chole Masala [44]

INGREDIENTS : for channa masala
▶Dried chickpeas (200 gms) - 1 cup
▶Water for pressure cooking for chickpeas - 2.5 to 3 cups
▶Dried amla or Indian - 2 to 3
▶Gooseberry (optional) or 1 black tea bag
▶Salt - 1/2 tsp
Cook the channa and the above ingredients in cooked for 3-4 whistle or untill channa dal is soft.
Homemade Chole Masala powder (panjabi style)
INGREDIENTS :
▶Black cardamoms/Elaichu - 2
▶Cinnamon/dalchini - 1 inch
▶Peppercorns/Sabut kali mirch - 3 to 4
▶Cloves/Lavang - 2
▶Medium Indian Bay leaf/Tej patta or 2 small tej patta - 1
▶Carom seeds/Ajwain - 1/4 tsp
▶Cumin seeds/jeera - 1 tsp
▶Coriander seeds/Dhania - 1 tsp
▶Fennel seeds/Saunf - 1 tsp
▶Dry Pomegranate seeds/Anardana - 1/2 tsp
▶Dry red chillies - 1 or 2
Roast all the above to light brown and grind to fine powder.
In a kadai(pan) add oil and fry onions(1-2) to golden brown. Then add 1 tbls Ginger garlic paste, tomato and cook till raw smell goes. Then add homemade Chole Masala, 1/4 tsp Turmeric, 1/2 tsp chilli powder, 1/4 tsp Garam masala and cook till raw smell goes.. Now add Boiled chickpeas and saute well with 1 tsp lime juice and 1 tbls Yogurt. Then add 1 cup of water
And cook well for 10 minutes. Garnish with onions, tomato, Coriander leaves and 1 tsp Butter.
And serve with roti...
