We will make Choc-drizzled muesli bars for me and for Harry we will make a Pull-apart Cheese and Onion Christmas Tree. Now let start cooking also I am going to give you all the recipes now so here you all.

900g cauliflower (1 small head)

1/3 cup (50g) chickpea flour (besan)

1/2 cup (50g) raw cashews

3 garlic cloves

5cm piece (25g) ginger, finely grated

1/4 cup (60ml) sunflower oil, plus extra to grease

400g thick Greek-style yoghurt

1/4 tsp chilli powder

1 tsp carom seeds (from Indian food shops - substitute with fennel seeds)

3 tsp each garam masala & ground cumin

200g creme fraiche

Chopped coriander sprigs, deseeded chopped tomatoes, chaat masala (from Indian food shops) & finely chopped green chilli, to serve

METHOD

1. Cut the cauliflower into large florets. Bring a saucepan of cold, salted water to the boil over high heat and add cauliflower. Once water has returned to the boil, cook cauliflower for 1 minute, then drain and set aside.

2. Place chickpea flour in a frypan over medium heat and dry-roast, stirring often, until it is slightly darkened and smells roasted. Remove from heat and set aside.

3. To make the batter, place nuts, garlic, ginger, oil and half the yoghurt in a food processor and whiz until smooth. Stir in spices, 1/2 tsp salt, roasted chickpea flour and remaining 200g yoghurt. Transfer batter to a large bowl, add cauliflower and stir to combine. Stand for 20 minutes.

4. Meanwhile, line the base of the oven with aluminium foil and preheat to 200°C. Use extra oil to grease an oven rack.

5. Place the cauliflower florets directly on the hot, oiled rack and return to the centre of the oven. Bake for 40-45 minutes or until charred in places and tender.

6. Spread a serving platter with creme fraiche and top with cauliflower. Combine coriander, tomato, chaat masala and chilli, and scatter over cauliflower to serve.

250g haloumi rinsed patted dry with paper towel cut into 1cm thick chips

1/4 cup plain flour

1 egg

60g Doritos Cheese Supreme corn chips

400g corn kernels drained rinsed

1/4 cup peri peri mayonnaise

1 tbs fresh lime juice

4 cups mixed salad leaves

1 red onion thinly sliced

1 avocado

250g cherry tomatoes halved

1 bunch coriander leaves

1 splash fresh lime juice *extra *optional

Method

Preheat the oven to 180C/160C fan-forced. Line a baking tray with baking paper.

Pulse the Doritos corn chips in a food processor until coarsely chopped. Transfer to a plate. Whisk the egg in a shallow bowl. Place the flour on a separate plate.

Place the haloumi in the flour, shaking to remove excess. Dip in the egg and then press into the corn chips, pressing well to coat. Transfer to the prepared tray. Spray with oil. Bake for 12-14 minutes or until golden.

Combine the peri peri mayonnaise and the lime juice. Toss half of the peri peri mixture through the salad leaves. Place on a platter. Top with the corn, onion, avocado, tomato and haloumi chips. Drizzle with the remaining dressing. Serve topped with coriander leaves and a squeeze of lime, if you like.

Ingredients

1 cup rolled oats

1/2 cup pecans (chopped)

1/2 cup whole almonds (skinless)

1/2 cup shredded coconut

1/2 cup dried cherries

1/2 cup dried blueberries

1/3 cup honey

1/4 cup brown sugar

1/4 cup coconut oil

1 tsp ground cinnamon

1 pinch salt

50 g dark chocolate (melted)

Method

Grease and line a 20cm square baking tin with baking paper, leaving some overhang on each side.

Place the oats, nuts, coconut and fruits into a large mixing bowl.

Combine the honey, sugar, coconut oil, cinnamon and salt in a small saucepan and place over a medium heat, until the mixture begins to bubble at the edges.

Pour the honey mixture into the dry ingredients and stir very well until everything is coated.

Scoop the mixture into the lined pan and press the mixture down into the edges. Keep pressing the mixture very firmly for longer than you think is necessary - this is what will stop the bars from falling apart.

Place the bars into the fridge to set for at least an hour. When the bars are totally chilled, remove from the tin using the baking paper overhang to lift them out, and then slice into 10 bars and drizzle lightly with the melted chocolate. Place back in the fridge to set and then serve.

3 cups (450g) plain flour

2 teaspoons (7g) dry instant yeast

3 teaspoons sugar

2 teaspoons salt

1 cup (250ml) lukewarm water

2 tablespoons olive oil

CHEESE AND ONION FILLING

60g butter, melted

1 ½ tablespoons garlic salt

2 ½ cups (300g) grated mozzarella

⅓ cup (35g) grated parmesan

150g jar Rosella White Cocktail Onions, drained

150g jar Rosella Green Cocktail Onions, drained

150g jar Rosella Cocktail Red Onions, drained

Method:

SCROLL DOUGH

To make the dough, combine flour, yeast, sugar and salt in a large bowl. Add water and oil. Stir to form a soft dough. Knead on a lightly floured surface for about 5 minutes, or until smooth and elastic. Set aside, covered, for 30 minutes while making the filling

CHEESE AND ONION FILLING

Meanwhile, combine melted butter and garlic salt

Preheat oven to 200°C/180°C (fan-forced). Line a large baking tray with baking paper

Punch down dough and roll out to a 40cm x 30cm rectangle. Brush dough with melted butter mixture, scatter over mozzarella and parmesan

Coarsely chop ⅓ cup of the white cocktail onions and scatter over the cheese

Halve 15 green and 15 red cocktail onions and sprinkle over the top. Roll up dough tightly to form a 40cm log. Cut into 16 scrolls. Arrange 15 scrolls into a triangle shape on a prepared baking tray. Add last scroll as the tree trunk

Bake for 30-35 minutes, or until golden. Brush with remaining butter while it is still hot. Serve warm, topped with extra cocktail onions

Tips & Hints:

Dough can be made in advance. Cover and refrigerate overnight. Bring back to remove temperature before rolling

Short on time, substitute with fresh 250g dough balls from the supermarket. You will need 3 or 4 dough balls
