CHEWY COCONUT MACAROONS

  3/4 c. all purpose flour
  14 oz. coconut flakes
  1 1/2 tsp. almond extract
  1/8 tsp. salt
  1 can fat-free sweetened condensed milk

  Preheat oven to 250 degrees.
  Combine flour and coconut in a medium bowl and toss well. Add almond extract, salt, and milk. Stir until well blended (mixture will be very thick).
  Drop batter by scant tablespoon (about 2 tsp.) two inches apart onto baking sheet that has been sprayed with vegetable spray.
  Bake at 250 degrees for 50 minutes or until golden brown. Remove from pan cool completely on wire racks.
  Yield: 32 cookies.
