Pumpkin Nutella Cupcakes

Pumpkin Cupcakes topped with creamy Nutella frosting. We added some fun sprinkles to really kick up the Halloween feel!

~Ingredients:

-Pumpkin Cupcakes:*

1 2/3 Cups All Purpose Flour.

1 Teaspoon Baking Soda.

1/2 Cup Granulated Sugar.

3/4 Teaspoon Salt.

1/2 Teaspoon Cinnamon.

1/2 Teaspoon Nutmeg.

1/4 Teaspoon Ground Ginger.

1/2 Cup Oil.

2 Large Eggs.

1/3 Cup Milk.

1 Cup Pumpkin Puree.**

-Nutella Frosting:

1/2 Cup Butter, softened.

1/2 Cup Nutella.

2 Teaspoon Vanilla Extract.

1/4 Cup Unsweetened Cocoa Powder.

2 - 4 Tablespoons Milk.

2 - 3 Cups Powdered Sugar.

-Topping:***

Chocolate Sprinkles.

Orange Sprinkles.

~Directions:

Step 1Preheat oven to 400 degrees fahrenheit. Line the cupcake tray with liners. Set aside.

-Making the Cupcakes:

Step 2Sift the flour, baking soda, sugar, salt, cinnamon, nutmeg and ground ginger together.

Step 3Add in the oil, eggs, milk and the pumpkin puree.

Step 4Stir just until combined and then fill cupcake liners 3/4 full.

Step 5Bake for 16 - 20 minutes or until a toothpick or a knife inserted comes out clean.

Step 6Remove the cupcakes from the oven and allow them to cool for 2 to 3 minutes, then transfer them to a cooling rack to finish cooling.

-Making the Nutella Frosting:

Step 7Beat the butter and the Nutella until smooth. 

Step 8Add in the vanilla extract, cocoa powder and 2 tablespoon milk and beat again.

Step 9Slowly add in the powdered sugar a little at a time until you reach your desired consistency.

Step 10Add more milk to keep frosting from getting too thick.

Step 11Pipe onto the cooled cupcakes and top with sprinkles!

Step 12: Eat and Enjoy!

~Recipe Notes:

*You can use pumpkin pie spice instead of the separate spices (Nutmeg, Ground Cinnamon and Ground Ginger).

**You can use either fresh pumpkin puree or canned pumpkin puree.
