Carrot Patch Cupcakes

These cute little carrot patch cupcakes are perfect for spring! The Easter Bunny is going to love nibbling on them!

~Ingredients:

-Cupcake:

1 3/4 Cups All Purpose Flour.

2 Cups Granulated Sugar.

3/4 Cup Cocoa Powder.

1 1/2 Teaspoon Baking Powder.

1 1/2 Teaspoon Baking Soda.

1 Teaspoon Salt.

1 Cup Whole Milk, room temperature.

2 Eggs, room temperature.

1/2 Cup Vegetable Oil.

2 Teaspoon Vanilla Extract.

1 Cup Coffee, warm.

-Chocolate Frosting:

3 Tablespoons Butter, softened.

3 Tablespoons Unsweetened Cocoa Powder.

2 Tablespoons Whole Milk (or Heavy Cream).

1 Tablespoon Honey.

1 Teaspoon Vanilla Extract.

1 Cup Powdered Sugar.

-Orange Frosting:

2 Cup White Chocolate Chips.

2 Tablespoon Coconut Oil.

Orange Food Coloring.*

-Carrot:

24 Wooden Skewers, for dipping.**

24 Large Strawberries.

-Carrot Patch:

20 Oreo Cookies, crushed.

~Directions:

Step 1: Preheat oven to 350 degrees fahrenheit. Line the cupcake tray with liners. Set aside.

Step 2: Sift together the dry ingredients. Place into a jar or in an air tight container. Set aside.

Step 3Whisk milk, oil, eggs, coffee and vanilla in a large bowl until well mixed and slightly frothy.

Step 4Add in the dry ingredients mixture and whisk until just barely combined and smooth. Don't Over Mix!

Step 5Fill the cupcake liners 3/4 full and bake for about 25 - 30 minutes or until a knife inserted comes out clean. Let the cupcakes cool completely before frosting. 

Step 6: Once the cupcakes are cooled, cut a quarter size hole in the center of the cupcakes, about 3/4-inch deep.

-Making the Orange Frosting:

Step 7: In a small deep bowl, microwave the white chocolate chips on high for about one minute, stirring every 20 seconds to remove the lumps.

Step 8Add coconut oil and 10 drops of orange food coloring. Mix until well combined.

-Making the Carrots:

Step 9Line a large baking sheet with parchment paper.

Step 10Pierce each strawberry with a skewer and dunk the strawberries in the melted orange chocolate. Repeat if more coat is needed. Make sure you don't coat the strawberry leaves with frosting!

Step 11Place on lined baking sheet and refrigerate until set. This will take about 15 minutes.

Step 12: If you have leftover orange frosting then you can drizzle it over the hardened strawberries. Place the tray back in the refrigerator until you need it.

-Making the Chocolate Frosting:

Step 13: Combine the room temperature butter, cocoa, honey, vanilla and sugar.

Step 14: With a mixer combine the ingredients for about 30 seconds.

Step 15: Slowly add in the milk, one tablespoon at a time, until you reach desired consistency.***

Step 16Place the frosting on a piping bag or a ziploc bag with the corner cut. Frost the cupcakes and then top with crushed oreos.

-Making the Carrot Patch:

Step 17Bury a strawberry "carrot" in the center of each cupcake****

Step 18: Keep refrigerated when not serving. The cupcakes are fresh for up to 3 days.

Step 19: Eat and Enjoy!

~Recipe Notes:

*You can use as little or as much orange food coloring you want. It depends on your taste and what kind of food coloring you are using (gel, powder, liquid etc...). If you don't have orange food coloring on hand, you can combine red and yellow food coloring to make orange food coloring.

**You can use toothpick if you don't have wooden skewers on hand.

***The reason we said slowly was because you may not need all 3 tablespoons, you may need 1 more. It all depends on you and what type of consistency you would like.

****You can also add some peeps or robin egg candy. You can also do Easter M&Ms on it for decoration, if desired.
