Apple Pie Cupcakes

You will find all the wonderful flavors of an apple pie in these Apple Pie Cupcakes with brown sugar and cinnamon frosting.

~Ingredients:

-Yellow Cake:

2 1/4 Cups All Purpose Flour.

1 1/2 Cups Granulated Sugar.

3 1/2 Teaspoons Baking Powder.

1 Teaspoon Salt.

1 1/4 Cup Milk.

1/8 Cup Vegetable Oil.

1 Teaspoon Vanilla Extract.

3 Large Eggs.

8 Tablespoons (1 Stick) Unsalted Butter, softened.

-Apple Pie Filling:  

3 Tablespoon Granulated Sugar.

3 Medium sized apples, cored, peeled, and diced into small pieces.

1 Tablespoon Fresh Lemon Juice.  

1/2 Teaspoon Ground Cinnamon.  

1/4 Teaspoon Salt.

2 Tablespoons (1/4 Stick) Unsalted Butter, softened.  

2 Teaspoon All Purpose Flour.

-Frosting:

16 Tablespoons (2 Sticks) Unsalted Butter, softened.

1/2 Cup Brown Sugar.

1 Teaspoon Ground Cinnamon.

1 Teaspoon Vanilla Extract.  

3 Cups Powdered Sugar.

2 Tablespoon Milk.

-Topping:

Ground Cinnamon.

Apple, sliced.

~Directions:

-Making the Cupcakes:  

Step 1Preheat oven to 350 degrees fahrenheit. Line the cupcake tray with liners.

Step 2Mix softened butter on medium for 1-2 minutes. 

Step 3Combine the dry ingredients with butter for 30 seconds. 

Step 4Add the milk, oil, vanilla and eggs and mix on medium - high for one minute.

Step 5: Pour the batter into the prepare tray. Start checking the cupcakes around 15 minutes until toothpick inserted comes out clean.

Step 6Let the cupcakes cool in the pan for 5 minutes, then turn out onto a cooling rack to cool completely.

-Making the Filling:    

Step 7Mix the apples, granulated sugar, lemon juice, cinnamon, and salt together in a medium bowl.

Step 8: Melt the butter in a medium pan over medium heat on the stove and add the apple mixture and cook, stirring frequently, until the apples are tender and liquid is bubbling. This will take about 6 minutes.

Step 9Add the flour, and stir together until the liquid thickens.

Step 10Remove from heat and let the filling cool completely.

-Making the Frosting:

Step 11Whip together the butter, brown sugar, cinnamon and vanilla until fluffy. 

Step 12Gradually add the powdered sugar. 

Step 13Add milk until you reach the desired consistency.

Step 14Transfer to piping bag or a ziploc bag with a corner cut out.

-Putting it all together:

Step 15: Using a knife cut a hole in the cupcake.*

Step 16Put about 1 tablespoon filling inside the cupcakes.

Step 17: Place the cut cupcake back on top of the filling.

Step 18Pipe the frosting on the cupcake.

Step 19: Sprinkle with ground cinnamon.

Step 20: Garnish with an apple slice. 

~Recipe Notes:

*The hole needs to be able to hold about 1 Tablespoon of the filling.

1) Make sure that the cupcakes and the filling are cooled completely because the cupcake will fall apart when you put in the filling and when you go to frost the cupcake, the hot filling and the hot cupcake will melt the frosting.

2) You can use any type of apple you want.
