Passion fruit mimosa

1 bottle of Champagne 

1 package frozen passion fruit concentrate thawed and mixed with

1 quart of  orange juice 

Half fill glasses with juice mix and add Champagne (or sparkling white wine).

Classic Crepes with Grand Marnier  raspberry   sauce 

Sauce

1 cup seedless raspberry puree

2 Tablespoons Grand Marnier (or orange or raspberry liquor)

1/2 cup orange juice

zest of 1 orange 

3 Tablespoon confectioner's sugar 

Blend together until smooth. 

Crepe

1 1/3 c cake flour

1/2 tea salt

1 cup milk

1 egg

Well beaten until slightly foamy. Cook 1/4 cup of batter on hot crepe griddle or non-stick pan lightly oiled, heated to 375 degrees F. Cook 20-30 seconds until ready. If it takes more than a minute, cooking surface is too cold or batter too thick and the crepe will be rubbery.

Garnish with sauce.

Chocolate souffle
Preheat oven to 375°F

5 oz bittersweet chocolate (not unsweetened), chopped and melted in double boiler. Cool slightly and add

3 large egg yolks at room temperature, blend until smooth and thick then set aside.

6 large egg whites and

3 Tablespoons whipping cream, whipped to soft peaks, slowly add

1/3 cup sugar, when all added increase mixer speed until stiff peaks.

Slowly add 1/3 of whipped egg whites to chocolate mixture, until smooth then gently fold in until thoroughly mixed, to don't over mix or you'll lose the stiffness of the egg whites. Butter glass souffle dish and sprinkle with sugar. (Souffles can be prep'd up to an hour ahead if kept cool.)

Bake in middle of oven until puffed and crusted on top but still jiggly in center, 20-25 minutes. Serve immediately.
