Neapolitan Fudge
If you like Neapolitan ice cream, then you will devour this fudge version of the vanilla, strawberry and chocolate. This fudge is a fabulous way to get a delicious treat on a hot summers day.
~Ingredients:
-Chocolate Layer:
4 Ounces Cream Cheese, softened.
1 1/2 Cups Confectioners Sugar.
8 Ounces Milk Chocolate, melted and cooled.
-Strawberry Layer:
4 Ounces Cream Cheese, softened.
1 1/2 Cups Confectioners Sugar.
8 Ounces White Baking Chocolate Chip, melted and cooled.*
1 Tablespoon Strawberry Extract**
2 Drops Red Food Coloring. (Optional)
-Vanilla Layer:
4 Ounces Cream Cheese, softened.
1 1/2 Cups Confectioners Sugar.
8 Ounces White Baking Chocolate, melted and cooled.
~Directions:
Chocolate Layer:
Step 1: Line a 9 x 9 baking pan with parchment paper and set aside.
Step 2: In a stand mixer with the paddle attachment, beat the 4 ounces of cream cheese until fluffy.
Step 3: Gradually beat in the confectioners sugar and then add in the melted milk chocolate.
Step 4: Spread into the prepared pan.***
Step 5: Refrigerate for 10 minutes.
Strawberry Layer:
Step 6: In a stand mixer with the paddle attachment, beat the cream cheese until fluffy.
Step 7: Gradually beat in the confectioners sugar and the strawberry extract.
Step 8: Add in the food coloring if desired.
Step 9: Spread on top of the chocolate layer.
Vanilla Layer:
Step 10: In a stand mixer with the paddle attachment, beat the cream cheese until fluffy.
Step 11: Gradually beat in the confectioners sugar.
Step 12: Beat in the melted white chocolate.
Step 13: Carefully spread over the strawberry layer. Try to get layer as flat and as even as possible.
Step 14: Refrigerate uncovered for 10 minutes.
Step 15: Cover and refrigerate for at least 2 hours or overnight.
Step 13: Using parchment paper, lift the fudge out of the pan.
Step 14: Cut the fudge into 1 inch squares.
Step 15: Store in an airtight container in the refrigerator.
~Recipe Notes:
*You can also use either the strawberry flavored melting chips or the raspberry flavored melting chips or a little bit of both, if you would like.
**You can also use raspberry extract in place of the strawberry extract.
***We pressed the layer down as flat as we could.
