Cherry Coke Fudge

 A decadent cherry fudge topped with a Coca-Cola chocolate frosting! This irresistible fudge is sure to be a hit this holiday season!

~Ingredients:

3/4 Cup Butter, softened.

3 Cups Granulated Sugar.

2/3 Cup Heavy Whipping Cream.

2 Tablespoons Cherry Gelatin Jell-o

12 oz White Baking Chips.

7 oz Marshmallow Creme.

1/2 Teaspoon Cherry Extract. 

1/2 Teaspoon Vanilla Extract.

10 oz Maraschino Cherries, drained.

~Coca Cola Frosting:

1/2 Cup Unsalted Butter.

3 Tablespoons Unsweetened Cocoa Powder.

6 Tablespoons Coca - Cola.

4 Cups Powdered Sugar.*

1 Teaspoon Vanilla Extract.

~Directions:

-Making the Cherry Fudge:

Step 1: Line a 9 inch by 9 inch pan with aluminum foil and lightly spray with cooking spray. Leave enough aluminum foil overhanging on the sides to lift the fudge out of the pan. Set aside.

Step 2Cut the cherries into quarters. Pat with a paper towel over and over again to remove as much moisture as possible. Continuing patting with a paper towel until there isn't any more moisture. Set aside.

Step 3Combine butter, sugar, and heavy cream in a heavy bottomed saucepan.

Step 4Bring to a boil over medium heat, stirring frequently.

Step 5Once at a full boil, continue boiling for 3 minutes, stirring continuously.

Step 6Add cherry gelatin and stir continuously, boiling for another 2 to 3 minutes or until gelatin is completely dissolved.

Step 7Remove from heat and stir in white baking chips. (We used a whisk to get out all the lumps).

Step 8Stir in marshmallow creme and both of the extracts.

Step 9Fold in the dry maraschino cherries.

Step 10Pour into prepared pan and let cool to room temperature and then refrigerate.

-Making the Cocoa - Cola Frosting:

Step 11Place the powdered sugar in a heat proof bowl and set aside.

Step 12In a small saucepan, combine the butter, unsweetened cocoa, and Coca - Cola over medium heat.

Step 13Bring to a boil and pour over powdered sugar. 

Step 14Whisk until combined and smooth.

Step 15Add vanilla extract and continue whisking or stirring to combine.

Step 16Immediately pour over chilled fudge. 

Step 17Use an to gently spread the frosting over the top of the fudge.

Step 18Chill for 20 minutes or until frosting has set.

Step 19Cut into small pieces and serve.

Step 20: Eat and Enjoy!

~Recipe Notes:

*The more powdered sugar you add, the more sweeter the frosting will be.
