White Chocolate Berry Pudding Cake
Pockets of pudding and fresh berries make this easy White Chocolate Berry Pudding Cake a delicious and sweet treat. It's the perfect dessert for a picnic or party on a hot summer day!
~Ingredients:
-Yellow Cake Mix:
2 1/4 Cups All Purpose Flour.
1 1/2 Cup Granulated Sugar.
3 1/2 Teaspoon Baking Powder.
1 Teaspoon Salt.
1 1/4 Cup Milk.
1/8 Cup Vegetable Oil.
1 Stick Butter, softened.
1 Tablespoon Vanilla Extract.
3 Large Eggs.
-Pudding:
1 Box (3.4 ounces) Instant White Chocolate Pudding Mix.
2 Cups Milk.
-Frosting:
1 Container (8 ounces) Cool Whip, thawed.*
1 Can (21 ounces) Mixed Berry Pie Filling.**
-Topping: ***
3/4 Cup Blueberries.
3/4 Cup Raspberries.
1/2 Cup Blackberries.
2 Ounce White Chocolate Bakers Bar.
~Directions:
-Making the Cake:
Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Butter and lightly flour a 9 inch baking pan.
Step 3: Mix the softened butter on medium for 1 - 2 minutes.
Step 4: Combine the dry ingredients with the butter for 30 seconds.
Step 5: Add milk, oil, vanilla and eggs and mix on medium - high for one minute.
Step 6: Pour the batter into the prepared pan. Bake for 20 - 25 minutes. Cool before frosting.
Step 7: Use the handle of a wooden spoon to poke holes all over the warm cake.
-Making the Pudding:
Step 8: Whisk together the pudding mix and the milk.
Step 9: Refrigerate for 2 - 3 minutes or until slightly set.
Step 10: Pour over the top of the cake and use a spatula to push the pudding into the holes.
Step 11: Let cool another 10 minutes on the counter, then refrigerate until completely chilled.
-Making the Frosting:
Step 12: Stir together the Cool Whip and pie filling gently. Spread on top of the chilled cake.
Step 13: Add the berries to the top of the cake and refrigerate until ready to serve.
Step 14: Use a veggie peeler to shave the white chocolate baking bar into small curls and pieces. Sprinkle on the cake right before serving.
Step 15: Eat and Enjoy!
~Recipe Notes:
*Why did we use Cool Whip? Because it makes the easiest and fluffiest for this type of cake.
**You can find this Mixed Berry Pie Filling in the canned fruit aisle of your grocery store.
***Feel free to use more or less berries. We left a few spaces in the topping because we wanted to add in the white chocolate curls too.
