Lemon Blondies
We love how light they taste ... they're the perfect lemon dessert for the Summer!
~Ingredients:
-Blondie Mix:*
1/2 Cup Salted Butter, softened.
3/4 Cup Granulated Sugar.
Zest of 1/2 Lemon.
2 Large Eggs.
1 Tablespoon Fresh Lemon Juice.
3/4 Cup All Purpose Flour.
1/2 Teaspoon Baking Powder.
-Glaze:
3/4 Cup Powdered Sugar.
1 1/2 Tablespoon Fresh Lemon Juice.
Zest of 1/2 Lemon.
~Directions:
~Making the Brownies:
Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 8 inch by 8 inch pan with parchment paper or aluminium foil and grease lightly. Leave enough aluminum foil overhanging on the sides to lift the brownies out of the pan. Set aside.
Step 2: In a large bowl or the bowl of a stand mixer, beat together the butter, sugar, and lemon zest until light and fluffy.
Step 3: Add the eggs one at a time, mixing well after each addition, then add the lemon juice.
Step 4: Add the flour and baking powder, and mix until just combined.
Step 5: Pour the batter into the prepared pan and smooth into an even layer.
Step 6: Bake 20-25 minutes, or until a toothpick inserted into the brownies comes out clean.
Step 7: Let lemon blondies cool for 10 - 15 minutes.
~Making the Glaze:
Step 8: Whisk together the powdered sugar, lemon juice, and lemon zest, then pour over the brownies, spreading evenly to coat.
Step 9: Let the lemon blondies cool completely before slicing and serving.
Step 10: Eat and Enjoy!
~Recipe Notes:
*If using unsalted butter, make sure to add a pinch of salt to the batter.
