Lemon Blondies

We love how light they taste ... they're the perfect lemon dessert for the Summer!

~Ingredients:

-Blondie Mix:*

1/2 Cup Salted Butter, softened.

3/4 Cup Granulated Sugar.

Zest of 1/2 Lemon.

2 Large Eggs.

1 Tablespoon Fresh Lemon Juice.

3/4 Cup All Purpose Flour.

1/2 Teaspoon Baking Powder.

-Glaze:

3/4 Cup Powdered Sugar.

1 1/2 Tablespoon Fresh Lemon Juice.

Zest of 1/2 Lemon.

~Directions:

~Making the Brownies:

Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 8 inch by 8 inch pan with parchment paper or aluminium foil and grease lightly. Leave enough aluminum foil overhanging on the sides to lift the brownies out of the pan. Set aside.

Step 2: In a large bowl or the bowl of a stand mixer, beat together the butter, sugar, and lemon zest until light and fluffy.

Step 3Add the eggs one at a time, mixing well after each addition, then add the lemon juice. 

Step 4Add the flour and baking powder, and mix until just combined. 

Step 5Pour the batter into the prepared pan and smooth into an even layer. 

Step 6Bake 20-25 minutes, or until a toothpick inserted into the brownies comes out clean. 

Step 7Let lemon blondies cool for 10 - 15 minutes.

~Making the Glaze: 

Step 8: Whisk together the powdered sugar, lemon juice, and lemon zest, then pour over the brownies, spreading evenly to coat. 

Step 9Let the lemon blondies cool completely before slicing and serving.

Step 10: Eat and Enjoy! 

~Recipe Notes:

*If using unsalted butter, make sure to add a pinch of salt to the batter.
