Riddle- Cut off my head and I become even. Take away my tail and I become second. Cut off my end letters on both sides I will be 'five'. I am a number, what number am I?

@RiverOfSin- Im like, super flippin late, but I'm at least 90% sure  that the answer is seven as a written out word. If you cut the "head" or the letter 's' off, you are left with the word even witch could be synonymous for the word equal (in some cases at least) and if you then proceed to remove the "tail" if (A/N- I'm pretty sure he/she meant 'or') 'n' you are left with the word 'Eve', who according to the Christian Bible was the second person to be created. Take off the two letters from the end and you are left with V, the Roman numeral for five
