Scraping the Bowl
It's an easy mistake to hurry through your batter preparation and forget to scrape the mixing bowl and remix the ingredients.
-Why do you need to scrape the bowl?
1) Often recipes require you to cream together the butter with the sugar. After you cream them together you will notice that the mixture is all on the sides of the bowl and if you don't scrape them off the sides and just add in the rest of the stuff for the batter, the butter / sugar mixture is still on the sides of the bowl which will lead you to have inconsistencies in your batter.
-What will happen if you don't scrape the bowl?
If you don't scrape your bowl then your batter won't turn out the way you planned it to. The cakes will sink in the middle, won't rise correctly, will get hard, will be raw no matter how long you bake it for etc...
-When should you scrape the bowl?
We usually scrape the bowl twice during prep. Once after we have creamed the butter and sugar together and again at the end once all ingredients are incorporated into the mixing bowl. Using a flexible spatula to scrape the entire surface of the mixing bowl down to the very bottom, then turn the mixer back on and beat until smooth.
