Keep Your Oven Door Closed. 

Constantly opening and closing the oven door can completely throw off your oven temperature. If you need to check your baked goods for doneness, do so quickly. Remove it from the oven, close the oven immediately, test for doneness, put it back in the oven as soon as possible if it needs more time.
