Cattails
Young cattail shoots and roots are also edible parts of cattail plants. The young shoots are found once the outer leaves are stripped and can then be used stir fried or sautéed. ... To prepare a cattail root, clean it and trim away the smaller branching roots, leaving the large rhizome. You can grill, bake or boil the root until it's tender. Once cooked, eating a cattail root is similar to eating the leaves of an artichoke – strip the starch away from the fibers with your teeth.
Remove outer peel, can be eaten raw, doesnt have much taste kinda feels pastey and melts in your mouth.
Boiled- looks kinda like pasta when it boils, smells like potatoes, still kinda melts in your mouth but is also chewy, has a good buttery/carrot/potato flavor, can possibly be used to make a soup because it leaves a creamyness to the water.
Pine needle
The needles from most coniferous trees, Pine, Fir, Spruce, and Hemlock are loaded with vitamin C and other nutrients. You can use it for tea, or you can grind it up and use it as a seasoning for cooking. It has a piney/citrusy taste and it smells good.
Acorns

aw acorns are considered unsafe due to their tannins, which are toxic if consumed in high amounts. However, you can remove the tannins by boiling or soaking. Properly prepared acorns are perfectly edible and full of nutrients like iron and manganese. Delicious roasted, they can also be ground into flour.
