As the only Skinwalker Wind Chester takes his form, or his 'skin' very seriously as do all Skinwalkers. Being asked to pick one is like being forced to wear the same outfit everyday forever. As for the rest of the cast, they are all good being themselves and are used to being just one form. And while William, Thomas and Echo can make others perceive them as different, they don't actually change their forms and thus don't understand why Wind Chester is having a meltdown over having to pick just one form when he has many.  XD
